The Westin Riverfront Resort & Spa at Beaver Creek Mountain is pleased to share that Chef Richard Sandoval will transform its restaurant space into a Vail Valley outpost of his flagship concept – Maya, a Modern Mexican Kitchen & Tequileria.
Maya will debut at the resort this June.
“We are very excited to transform Cima into Maya at The Westin Riverfront because it encompasses everything that our guests and locals want – a hip, inviting space with amazing food and cocktails,” said Westin Riverfront General Manager John Evans. “And it definitely helps that Maya and Chef Sandoval already have such a strong international following.”
Driven by demand from both resort guests and locals for a more upbeat, casual dining experience, Maya’s approachable menu will feature Chef Sandoval’s authentic Mexican flavors, blending traditional recipes with contemporary techniques to create dishes and cocktails that are familiar, fantastic and affordable.
Maya’s menu will showcase Chef Sandoval’s vibrant take on traditional Mexican recipes using high quality ingredients. There will be an extensive menu of guacamoles, with selections like Tuna Tartare and Chicharrones with Heirloom Tomatoes. Signature dishes will include Lobster & Shrimp Yucatan, traditional Mexican chicken and pork braises and Carne Asada. Fresh ingredients will continue to be sourced seasonally from Maya’s on-site garden.
The renovated space will also feature a handmade Tortilla Station and a bar and lounge offering more than 100 agave-based spirits and house-infused tequilas. Led by Beverage Director Rob Calfee, the Maya Bar will offer handcrafted margaritas and cocktails, as well as personal bottle storage.
The Westin Riverfront’s existing restaurant space will be transformed into a warmer, more casual setting. Maya will feature antique Mexican tile-work, dark stained wood floors, communal tables, hand blown glass lanterns and stylish banquettes upholstered in sleek leathers.
Maya New York – Chef Sandoval’s flagship restaurant – recently celebrated its 15-year anniversary with a complete redesign and expansion to include a Tequileria Maya. Maya Dubai, which opened at Le Royal Meridien Dubai in 2006, and Tamayo in downtown Denver, which opened in 2001, also recently underwent major renovations.
“While diners have loved Maya New York for more than 15 years, it was time to refresh and put the “modern” back in our Modern Mexican approach,” said Chef Sandoval. “The new Maya at The Westin Riverfront will allow us to share this flagship concept and its delicious flavor combinations with another vibrant community.”
Cima will continue to serve lunch and dinner daily through the end of ski season. The Westin Riverfront also offers The Lift, which serves a comfortable menu of all American classics, as well as the Lobby Bar and Market. The Westin Riverfront offers free on-site valet parking for diners and bar patrons.
