Venerable Chef/Owner Kelly Liken offers guests an extraordinary evening of American fare paired with award-winning bourbon whiskies curated by Buffalo Trace Distillery Master Distiller Ken Pierce

WHAT: Diners are invited to “head down the whiskey river” on Tuesday, June 26, 2012 as venerable chef and owner Kelly Liken of Restaurant Kelly Liken in Vail, CO, hosts special guest master bourbon distiller Ken Pierce of Kentucky’s Buffalo Trace Distillery for a four-course pairing dinner ($99++). The selections from this award-winning, family-owned distillery—will highlight some of the finest bourbons in the U.S. that Kelly experienced during a recent visit to the distillery and tour along the historic Bourbon Trail.

Kelly’s personal and professional passion for her favorite spirit will be reflected in the unique pairings created to bring out the intricate flavors of each whiskey and ingredient. Throughout the evening, guests will enjoy firsthand tales from the distillery and its dedication to time honored tradition and craftsmanship as told by Pierce, one of the country’s most respected experts in barrel aging, alongside dishes prepared by Kelly that will include:

First Course:

Crisp Braised Pork Belly

tender local greens salad, palisade cherry agri-doux

Buffalo Trace Kentucky Straight Bourbon Whiskey

Second Course:

Caraway Scented Potato Gnocchi

lamb pastrami and house made sauerkraut

W.L. Weller 7 year Bourbon Whiskey

Third Course:

Roasted Colorado Bison

high altitude carrots, plum gastrique

1792 Ridgemont Reserve Bourbon Whiskey

Fourth Course:

Duo of 7 year Cheddar

apple tart, salted caramel ice cream, smoked sea salt

Blanton’s Bourbon Whiskey
